How to make Black Garlic by our Black Garlic Fermentation Machine?

1. Introduction of Black Garlic and our Black Garlic Making Machine:

Black garlic is a very popular food made of fermented garlic.  The balck garlic have many good functions for human body.  How to make black garlic?  Here we will introduct the processing flow of our Black Garlic Machine.

When doing Black Garlic, it is a kind of Garlic Fermenting processing, usually needs 60-90days, however, for our professional Black Garlic Fermentor Machine, it only needs 14-30days to do the perfect fermented black garlic.

When do garlic Fermentation, it needs two main environment, the humidity and the temperature, for our machines, we have two series, with humidity controlor machine WM-HS***H series,

2.The Processing Method of two series Black Garlic Machine:

For the WM-HS*** series,  is without humidity control,   for example  WM-HS010  it is 10kg per batch model , without humidity controllor,  WM-HS030 is the 30kg per hour model without humidity controller.

For the WM-HS***H series,  is with humidty controllor. for example WM-HS030H,  is 30kg per batch, with humidity controllor machine.

The processing flow is a little different. 

For the without humidity controllor machine the recommend

85-88℃

Day 4-12

75-78℃

Day 12-15

After 12 days, if the garlic is wet and acid, increase the temperature by 3-5 degrees.

After 12 days, if the garlic is dry and hard, the temperature is lowered by 2-3 degrees.

A.Fermentation period(30days)

1.The fermentation temperature was 75 ℃ (humidity85%), set the time to 288h.

2.The fermentation temperature was 65 ℃ (humitity75%), set the time for the 48h

3.The fermentation temperature was 60 ℃ (humidity70%), the set time is 24h

4.Cooked oxidation at room temperature (is 20-35 ℃, 45-55% RH), time is more than 15 days

(Over temperature and humidity values according to the actual situation garlic adjusted up or down 5%)

B.Fermentation period(22days)

Temperature:60-70℃ humidity:80-90%  Setting time:30-45h

Temperature:53-65℃ humidity:80-90%  Setting time:30-45h

Temperature:40-55℃ humidity:70-80%  Setting time:25-35h

Temperature:75-85℃ humidity:80-95%  Setting time:30-45h

Temperature:65-70℃ humidity:80-95%  Setting time:40-55h

Temperature:60-70℃ humidity:80-90%  Setting time:220-260h

Temperature:80℃    humidity:85%    Setting time:45-60h

The differnence between this two kinds of machine

The with humidity control one, we just need to setting the temperature and humidity, then the machine can do automatically.    The machine need fresh water supply, once it is lack of humidity, the machine will spray water(steam) automatically.

The without humidity control one, we can only setting the temperature.   And if it is lack of humidity, we need to open machine and spray some water manually.  

Usually, our customer choose to use food grade plastic bag,  it can help to keep the humidity of the garlic.  Like the video shows:

this is for prevent humidity from evaporating.  Then the machine can do the fermentation by itself,  we do not need to open machine and spray some water manually

Generally speaking , it is like a automatic rice port and normal port to do rice,  one automatically adding water, one need by yourself.  That is also why the with humidity controllor machine is much expensive than the without one.  For it adding one extrat humidity senser system and water spray system.
